Alarm Clock Muffins
Both Zach and I are rather, well, sound sleepers in the morning... In my case, if I sleep through the alarm, Zach has to graduate from rubbing my back to tapping me on the shoulder to pulling me over to the side of the bed and tickling me before I will blink, open my eyes, and say, with complete mystification, "oh, hello Darlin' - is it morning?"
Zach is a bit easier to awaken, but he's far more convincing in getting the alarm turned off. Or maybe I'm just a softie... One morning, however, Zach had given me "strict orders" the previous night to "make sure" he "gets out of bed first thing in the morning." So, at 7AM I began tiptoeing into the bedroom at half hour intervals, saying coaxingly "Darlin', you said you wanted to get up... Do you want to get up now?" The response each time was the same: "Mmmummmahhh... In a bit - wake me a little later." And so the cycle continued for a while... Until I resorted to more effective measures: I went downstairs to the kitchen and made muffins - Maple Pecan Muffins, no less. This time, with the aroma of lightly sweet, hearty, healthful, freshly baked muffins following me upstairs, I whispered "Darlin', do you want to get up? I made muffins..."
Zach was downstairs in 5 minutes.
You can trust him - these are muffins worth waking up for.
Maple Pecan Muffins
1 cup whole wheat flour
1 cup white flour
1 cup rolled oats
2 tsp baking powder
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup low-fat buttermilk
1/4 cup unsweetened applesauce
3/4 cup maple syrup
1/2 cup raw sugar
1/4 cup olive oil
1 egg
2 tsp vanilla
1 cup pecan halves
~ Preheat the oven to 400 degrees F. Line approx. 12 muffin cups with paper liners.
~ Toss together the flours, oats, baking powder, cinnamon, baking soda, and salt.
~ In a separate bowl, whisk together all remaining ingredients except the pecans.
~ Stir the wet ingredients into the dry, just until blended.
~ Fold in the pecans.
~ Pour the batter into the muffin cups, filling the cups to the top.
~ Bake until tops are golden brown and a toothpick inserted in the center comes out clean - approx. 25 minutes.
~ Transfer immediately to a rack to cool - or serve immediately with melted butter!
wow, you really ARE a deep-sleeper, haha. good thing you made a batch of those maple-pecan muffins (HEAVENLY!!), to help wake you AND zach up :0)
ReplyDeleteI knew exactly where you were going with your title...the aroma of coffee, muffins, cakes in the morning is a lovely way to wake up and the cherry on top is brekkie in bed.
