To Health, Happiness, and Pizza



I began this post 4AM yesterday, as I was getting ready to depart for my first day of nursing school clinical assignments. I was excited, nervous, and - since our TV had expired the night before, and Zach was working on a project for his neuroanatomy class, and I had elected to be the one to drive to the store and attempt to explain the terms of the warranty to some poor beleaguered salesperson instead of going to bed early like I'd planned - I was also thoroughly sleepy.

Here I am again the next day, though, so I'm still alive!

Since I've now survived "The First Day," and I am once more completely excited about entering the health field, as opposed to the "what did I get myself into" feeling I was experiencing at 4AM, I offer a salad recipe in the spirit of health and wellness.

But not just any salad...



Salad Pizzas

Whole wheat flour tortillas
Honey mustard (just whisk honey into Dijon mustard, to your taste-buds' liking)
Fat free or low fat mozzarella cheese
Mixed baby salad greens
Cherry tomatoes, halved

~ Preheat the oven to 450 degrees F.
~ Spread tortillas with honey mustard (approx. 1 to 2 T per tortilla).
~ Scatter some mozzarella cheese atop the mustard.
~ Spread a generous pile of baby greens atop the cheese.
~ Place the cherry tomatoes on top of the greens
~ Top the whole ensemble with more mozzarella!
~ Bake just until the cheese has melted and the greens have begun to wilt slightly. Enjoy!

    Like PB&J, or Mac & Cheese, it seems like ANOTHER classic combination is Pizza & Salad - I LOVE how you combined the two!! Looks fabulous!!
