Coconut Stew with Pumpkin and Bok Choy



Whenever I find truly unique vegetables, I feel like I need to fix each one individually in it's own recipe to really give the vegetable at hand it's due. Yellow eggplant, orange cauliflower, green pumpkins... All perched artfully on my countertop, awaiting the possibilities. And then I remember what a multitude of veggies we have, between the farmers market and our CSA box, and I remember how much I love vegetable stew, how my mother's vegetable barley stew seemed so perfect and comforting to a small child on a cold night, and, of course, I fix stew. All the happier for it.





Coconut Stew with Pumpkin and Bok Choy

(Adapted from Johanna's excellent recipe)

2 T olive oil
1 onion, chopped
1/4 tsp ground ginger
1 tsp mustard powder
1 T sweet paprika
1/2 tsp grated nutmeg
1 medium eggplant, cut into 1" cubes then soaked in salt water for 20 minutes, then rinsed and patted dry
1 cup vegetable broth
1 (15oz) can lite coconut milk
1 head bok choy, roughly chopped
1 small pie pumpkin, peeled and chopped
12oz firm tofu, cut into 1" pieces
1 head cauliflower, cut into florets

~ Heat oil in a large stockpot over medium heat. Saute the onion onion until translucent.
~ Add the spices and stir constantly until fragrant.
~ Add broth, coconut milk, eggplant, and pumpkin.
~ Season to taste with salt and pepper, bring to the boil, then simmer for about 30 minutes.
~ Add cauliflower, bok choy, and tofu, and simmer uncovered cauliflower is tender.
~ Season again to taste with salt and pepper, and serve warm - topped with hot sauce, or grated cheddar cheese, or vegan cheese!

I feel the same way but then I eventually get to that fine line between the veggies being just perfectly ripe and just utterly rotten...and it comes time to throw them all in a pot and stew away! This sounds truly delicious!

what a great combination of vegies - I always love pumpkin but would never have thought of bok choy in this stew - love the idea - glad you enjoyed the recipe
