We didn't bring many purchases home from our cruise trip - in fact, we only brought one small one - can you guess? Something food related, of course... Vanilla! I'd previously purchased huge bottles of vanilla on trips to Mexico, so I was eager to try local carribbean vanilla. And for its first test recipe... My attempt at recreating our favorite dessert on the cruise ship: oatmeal cookies. These must have been seriously good oatmeal cookies to top all the elaborate pastries, right? Oh, indeed they were...
If you want the exact experience of the cruise cookies you can swap the SmartBalance spread used here for real butter... But I think this recipe either way produces some very grown up oatmeal cookies... And our new vanilla added an extra nostalgic touch!
Cruise Ship Oatmeal Cookies
1 cup SmartBalance Light
1 1/2 cups raw turbinado sugar
2 eggs
1/2 cup almond milk
1 1/2 tsp vanilla
1 3/4 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 tsp cloves
1/2 tsp allspice
2 1/2 cups rolled oats
1 cup raisins
1 cup chopped walnuts
~ Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper.
~ Cream together the SmartBalance Light and sugar until fluffy.
~ Add the eggs and beat well.
~ Stir in the almond milk and vanilla.
~ In a separate bowl, stir together the flour, baking soda, baking powder, salt, and 3 spices. Gradually add the dry ingredients to the wet.
~ Fold in the oats, raisins, and walnuts.
~ Drop by rounded tablespoonfuls onto the cookie sheets, and bake approx. 12 minutes. Cool on wire racks... Or serve warm!

These sound (and look) SO GOOD! I honestly believe oats are the best ingredient to add to cookies (other than the obvious, sugar).
So, do you ever watch Dateline? There was a whole story about cruises on the other weekend and it really gave cruises a bad name! Just curious if you saw it, it was super interesting.

These look good. We brought back food related stuff too from our honeymoon. Couldn't resist. Although you are much better than me. I brought all kinds of junk back, including a Hard Rock shirt since I collect them. Glad you were able to recreate the tasty cruise cookies.
