My graduate school spring semester started up last night, so I was in need of an easily transportable treat that could serve as both a healthful snack and dessert on thursday evenings when I don't return home from class until nearly midnight and Zach and I are forced to have supper apart.
I'm not thrilled about returning to classes and homework, but the cats are doing their best to be supportive...
To cheer us up we also have a beautiful new French press for making gorgeous strong coffee in the early morning...
I tried out an experimental batch of this much healthier alternative to the classic no-bake cookie ahead of time on Wednesday, and they were a huge success for dessert - and even better for breakfast the next day...
Healthful Vegan No-Bake Coconut Peanut Butter Cookies
1 cup rolled oats
2/3 cup unsweetened coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup dark chocolate chips
1/2 cup maple syrup
Simply stir together all the ingredients, roll the dough into balls, and voila!
And in honor of the new semester and new year, my hair is now extra red... :-)
My hubby would love these! Healthy and coconut - two of his favorite things :)
