Today, Zach requested a humble egg sandwich for lunch. But in our house, we do egg sandwiches in style:
Toasted sprouted rye bread...
Whole grain mustard...
Pan seared tempeh (seasoned simply with Cajun seasoning)
Steamed egg (our riff on a fried egg - coat a skillet with cooking spray, add a whole egg, season with Cajun seasoning, cover, and cook on medium until the yolk is just set)
A sprinkling of grated mozzarella and cheddar cheeses.
