I am so proud of how well we are doing with our local and seasonal eating in the past year, continuing to move forward with enthusiasm into 2013. Yes, we lack quite a bit of variety in our vegetables during the winter months, but we appreciate the bounty of spring and summer all the more vividly. And even in the chilly Midwest, we are far from deprived. We have sweet potatoes, winter squashes, and hearty cabbages, Brussels sprouts, and even winter kale. We are especially fortunate to have a local hydroponic farmer just outside of dayton, who keeps us well nourished and cheered by hydroponically grown spinach and arugula all winter long! Such a blessing! I savor our hydroponic spinach in a smoothie every morning as I patiently await spring...
