Guacamole is supposed to be one of the simplest of recipes, right? No cooking, just the quick combination of avocado, tomatoes, lime juice, spices, salt and pepper, and perhaps some onion, garlic, or jalapeno. No one could possibly complicate guacamole...
Leave it to me. I am the master at over-complicating. It's a family trait. Ask my parents and myself a simple yes or no question, and we will give you six completely different answers. And I bet you didn't even know there were more than two possible answers to a yes or no question... We are just that special. ;-)
Zach the #besthusbandever makes an incredible curried guacamole, which simply involves inserting curry powder into the "spices" slot in the above algorithm. It's fabulous, and needs no improvement. The other day he asked if I could make him some curried guacamole... and then returned to the kitchen a few minutes later to find my rattling pans and sautéing shallots. "Why are you cooking?" he asked in confusion... "Guacamole doesn't involve cooking..."
Leave it to me. I can complicate decisions on which brand of mustard to purchase, how to best wash jeans, and yes, even guacamole. But the results are so worthwhile... ;-)
Curried Guacamole
Adapted from http://food52.com/blog/11552-julie-sahni-s-curried-avocado-with-garlic-and-green-chiles1 tablespoon coconut oil1 teaspoon black mustard seeds1 teaspoon minced garlic
2 large ripe avocadoesJuice of 1 lime1 T dried cilantro (don't look at me like that, I know fresh is better, but it's not spring yet - fresh herbs aren't in season and I haven't added cilantro to my indoor potted herb garden yet...)
Coarse salt, to taste1 shallot, chopped1/2 teaspoon Curry Powder
~ In a small skillet over medium-high heat, cook the mustard seeds in the coconut oil, stirring occasionally, until they begin to make popping sounds.
~ Add the garlic and shallot to the skillet, and saute until tender and lightly golden.
~ Scoop the shallot mixture into a bowl, add the rest of the ingredients, and mash lightly with a fork until everything is combined and delicious. :-) Serve with carrot sticks or corn chips, and enjoy!
Your so funny, complicating simple recipe :) I like guacamole lots, but avocados are so so expensive here. I will have to try Zachs curried version for sure, but I have some of your other recipes ie the green porridge - to make first,so it will have to wait its turn, unless I come across reduce priced avocados here and I always have tortilla chips to hand.
