Creamy Cauliflower and Cannellini Bean Soup


Sometimes I worry about posting recipes that are too simple. Everyone already knows, I told myself one day last summer as we were eating salads for supper on the back patio, that artichokes, tomatoes, and mozzarella are delicious together. Truthfully, these aren’t even recipes, these are simply guiding ideas, or delicious facts, which I imagine as some form of culinary universal truths, known to all and therefore perhaps too ubiquitous to discuss.

In reality, though, I quite enjoy reading about other people’s delicious facts. I like to know what other foodies fix as a side dish on nights when they’ve just created an immensely complex lasagna that leaves little time for attention to anything else, or when they arrive home from work on a Tuesday night 3 hours later than anticipated, or perhaps when a quiet spring or summer day just asks for a dish of quiet simplicity.

Thus, I’m resisting my impulsive instincts to make this cauliflower soup more complicated than it needs to be, and simply allowing it to be what it is – a subtle, pure celebration of a cauliflower discovered on a stroll through Dayton’s 2nd Street Farmer’s Market…

Creamy Cauliflower and Cannellini Bean Soup


3 T coconut oil

2 cloves garlic, minced

1 onion, chopped

1/8 tsp cayenne pepper

1 (15 oz) cans cannellini beans, drained

1 ½ lbs cauliflower, cut into florets

3 cups vegetable stock

1/3 cup 2% evaporated milk

Smoked paprika, for garnish

~ In a large soup pot over medium-high heat, warm the coconut oil and sauté the garlic, onion, and cayenne until the onion is limp and translucent.

~ Stir in the beans and cauliflower and sauté for 2 more minutes.

~ Stir in the broth, bring to a simmer, and cook until the cauliflower is tender.

~ Remove from the heat and puree with and immersion blender or in batches in a food processor.

~ Return to low heat, and stir in the evaporated milk just until re-warmed. Season to taste with salt and pepper.

~ To serve, ladle into bowls, and sprinkle generously with smoked paprika!
