Zach's Pizza Sauce



I'm delighted with my new job, so I don't really mind that I have to work late every Friday... Especially because this Friday, I arrived home to find Zach had already created an amazingly flavorful, perfectly nuanced pizza sauce, then transformed the confection into a gorgeous whole wheat mushroom pizza...

Utterly swamped with residency as Zach is at every single moment, he still found time to prepare a luscious dinner for the two of us yesterday evening... and I feel very loved. Isn't that what true nourishment is all about?





Zach's Pizza Sauce

1 T olive oil
1 T SmartBalance Light
1 onion, chopped
2 stalks celery, chopped
"Lots of minced garlic" (direct Zach quote)
16 oz marinara sauce
6oz tomato paste
1 tsp basil
1 tsp oregano
1/2 tsp salt
1 tsp sugar
1 tsp fennel seed
1 bay leaf
Vegetable broth

~ In a large skillet or stock pot, saute the onion, celery, and garlic in the olive oil and SmartBalance Light until the onion is limp and translucent.
~ Add the rest of the ingredients, cover, and simmer until very flavorful and you have the desired consistency, adding broth as needed if the sauce gets too thick.
~ Use to create your favorite pizza! (To recreate Zach's pizza, use a whole wheat crust, and top the pizza sauce with mushrooms and a combination of asiago and fresh mozzarella cheeses...)

  1. That si my very favourite pizza topping and it looks so good. My mouth is seriously watering as I look at it. This is the second blog pizza I have drroled over tonight. I think I might just have to have pizza tomorrow.

  3. Definitely - there's nothing like having a meal lovingly cooked by your significant other after a long day at work! His sauce with all that garlic sounds fantastic :)
