Whole Wheat Sugar Cookies


Zach is home from Cincinnati! this is cause for celebration - and baking!

Whole Wheat Sugar Cookies
(Adapted from College Girl College Food)

2 3/4 cups whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 cup butter or SmartBalance Light
1/4 cup nonfat plain greek yogurt
1 1/2 cups turbinado sugar
2 egg whites
1 tsp vanilla extract

Preheat oven to 375 degrees.
Stir flour, baking soda, and baking powder in a small bowl, and set aside.
Beat butter/SmartBalance, yogurt, and sugar together until smooth. Beat in vanilla extract.
Mix in flour mixture until just incorporated. Roll dough into "walnut-sized" balls and place 2-inches apart onto greased baking sheets.
Bake until golden, 8-10 minutes. Let stand on baking sheets two minutes before removing to cook on wire racks. Enjoy!
