Cranberry orange oatmeal muffins... Returning.

  I have been coming and going lately, blogging less and less in the recent months. My job had been draining not only more and more of my time, but all of my creative energy and spirit. So I resigned.

We are now going to have a bit of a financial struggle until I find another job, but I for one would rather be broke than part of an organization that went against the very core of my values. And what are urban pioneers if not thrifty? Making your food from scratch is time consuming, but always more economical... Take these lovely muffins, for example!

Cranberry orange oatmeal muffins...









Cranberry Orange Oatmeal Muffins
(Very loosely adapted from godairyfree.org)

2 cups whole wheat flour
1 cup rolled oats
1/2 cup turbinado sugar
2 tablespoons chia seeds
1 teaspoon baking soda

1 teaspoon sea salt
2 teaspoons cinnamon

1-1/3 cups dried cranberries

2 teaspoons fresh orange zest
1/3 cup slivered almonds
3/4 cup soymilk
2 tablespoons lemon juice

1/3 cup canola oil
1/4 cup agave nectar

  1. Preheat oven to 350°F. Prepare a muffin tin with nonstick baking spray.
  2. Stir together the flour, oats, sugar, chia seeds, baking soda, sea salt, cinnamon, dried cranberries, orange zest, and almonds.
  3. In a separate bowl, combine Soymilk and lemon juice, and set aside for 7 minutes
  4. Add the soymilk mixture to the dry ingredients along with the oil and agave nectar, and mix until combined.
  5. Transfer mixture into prepared muffin tins. Bake for 30 minutes or until golden brown.

  6. Remove from oven, and set aside for 10 minutes to cool before serving - they will smell wonderful!

These make a lovely snack to take along on a long hike with your friend's adorable dogs... :-)

  1. Good on you for sticking to your principles. It has sounded like you were getting so busy and tired that it wasn't good for you so I hope you get to relax and smell the roses and take stock of your life. Am sure it will open the way for other opportunities. I have been doing less work lately due to changes in my workplace and it is very liberating and has made me more relaxed, even if less money in the pocket. Hope you enjoy the change.
