How to build a tofu sandwich that even a carnivore will crave:
Fix a really incredible orange glaze (see the recipe below, shared by Lisa during her visit).
For each sandwich you want to make, cut two 1" thick slices of firm tofu, and pat them dry with paper towels. Season the tofu slices generously with salt and pepper, and then brown them in a little bit of olive oil over medium-high heat, until nicely golden and slightly crispy on the outside.
Toast half of a whole wheat pita, then separate it into its top and bottom halves. On one half, place the two tofu slices in a somewhat decorative pattern.
Drizzle glorious glaze on top.
Add some romaine leaves for crunch...
and top with the other piece of toasted pita!
Voila!
Orange Glaze
1/2 cup orange marmalade
1/4 cup apple cider vinegar
1/2 cup maple syrup
1 T Dijon mustard
1 tsp potato starch
~ In a small saucepan over medium-low heat, whisk together all the ingredients. Heat, stirring frequently, until the glaze is thickened. Drizzle over tofu, chicken, roasted veggies, and all manner of other delicious dishes!
That sounds perfect for a hot day.....which we get all the time! So I will be making this

ReplyDeleteSometimes I really wish I could eat tofu. You make it look so good! Wow, awesome recipe. Actually today I saw a picture of a tofu sloppy joe in an add for a local restaurant. It really made my mouth water.

I used to make tofu sandwiches with slices like that all the time! Or I just fry the slices with an assortment of Italian seasonings and eat it by itself :).
