Farmers' Market Morning





On Saturday morning I went to the farmers' market...











...where I discovered fresh figs!!!





I was subsequently in such raptures that I was unable to properly focus on anything else for the entire rest of the day.

Except maybe the beautiful beets, onions, and eggplant...









The Easiest Ever Way to Fix Beets


~ Cut off the tops and ends of the beets, saving beet greens for other uses. Scrub the beets very well with soap, water, and a stiff brush or abrasive sponge. No need to peel them! Just get them super nice and clean...
~ Cut the beets into quarters or eighths, depending on the size of the beets. Place the wedges in a microwave safe bowl, and pour 1/2 cup vegetable broth over the beets.
~ Cover the beets with cling wrap or a plate, leaving one corner slightly askew to allow steam to escape.
~ Microwave for 15 minutes.
~ Season the beets to taste with salt and pepper, and serve sprinkled with finely grated Parmesan cheese! Pure magic!

    I'm a big fan of beets - but have never thought to dust them with Parmesan. What a great idea! :)

  6. Soooooooo jealous! Haven't seen figs here yet (though I'm going to the market tomorrow so WHO KNOWS?!)

    My favorite (easy!) way to make beets is just to trim them, clean them, and wrap them in foil and roast them for an hour. Added bonus for being super un-messy! Cause making beets its easy to end up with axe murderer hands.
